Hawaiian Tea Cookies



Here’s another favorite Christmas recipe.  These are called Hawaiian Tea Cookies.  They’re a slice and bake refrigerator cookie, full of flavor from coconut, and rolled in colored sugar to make them pretty and festive.





1 3/4 cups flour
1/4 teaspoon salt
1/2 teaspoon Baking soda
1/2 cup margarine, softened
1 cup sugar
1 egg
1 tablespoon lemon juice
2 teaspoons vanilla
1 cup coconut

1.    Mix dough and shape into 2 (2″) rolls.

2.    Roll each in colored sugar.

3.    Wrap in waxed paper and chill 4 hours.

4.    Slice 1/4″ thick and place 1″ apart on sprayed cookie sheets.

5.    Bake at 375 for 10-12 minutes.

Yields about 3 dozen
