Fast and Easy Dinner

Ramen_Noodle_Seafood_Packets_20090514104449_320_240I was thinking that I want to share another good recipe, and last night’s dinner is a perfect one for sharing.  It’s very fast and simple to make, and it tastes delicious.  This is a complete dinner that you make in individual serving foil packets.  You can use whatever ingredients you have on hand.  I switch up the vegetables, and the fish.  It’s good with any firm white fish, and also good with salmon.  I’ve made it with fresh or frozen vegetables, using asparagus, broccoli, mixed oriental veggies.  This is a pretty healthy dinner except for the salt in the seasoning package.  I like to liberally season my fish with lemon pepper.  Here you go….

Recipe Name:
Fish and Noodle Packets
Ingredients:
 

Any kind of firm fish like salmon, tilapia, cod, halibut, cut into serving size portions
Ramen noodles, dry, 1/2 pk. per serving
Any vegetables you like, such as asparagus, broccoli, chinese cabbage.
Peppers, cut in strips
Green onions or scallions, chopped
1/2 cup water per serving

Steps:
 

Make as many aluminum foil packets as you have servings.
Place 1/2 package of Ramen noodles on each foil packet.
Arrange vegetables of your choice on top of noodles.
Place fish on veggies, followed by the peppers and onions.
Mix 1/2 cup water per serving (4 servings=2 cups water) with the seasoning packs from the noodles.
Pour 1/2 cup of liquid in each packet.
Place sealed packets on a cookie sheet.
Bake at 400 degrees for 20-25 minutes.
This is such an easy and quick recipe. Really healthy and tasty too. You can mix and match whatever ingredients you have on hand.
